"Simply delicious" is a phrase associated with legendary Cork foodie Darina Allen, but a businesswoman from nearby Ladysbridge has set up her own range of seasonings called 'Simplee'. Edel Cooney was always a foodie but after losing her job in financial services she turned to her hobby for inspiration and thus was born 'Simplee', based on the idea of versatile, simple seasonings.

Edel's range, launched at the Clonakilty Agricultural Show recently, includes Garlic Sea Salt, Lemon Pepper and Sweet & Smoky Sea Salt. See www.simplee.ie for stockists.

Sweet and Smoky Chicken Wings

Perfect for summer evenings or watching sports!

Ingredients:

Chicken Wings

4 cloves of crushed garlic

Juice of 1 lime

Fresh chopped coriander

3 tbsp oil. (olive or rapeseed)

Simplee Sweet & Smoky Sea Salt

 

Method:

Mix all ingredients together reserving half the coriander for later.

Use a bowl or zip-loc bag for this.

Marinade in the fridge for at least one hour.

Bake in the oven at 200degrees for 40 minutes.

Serve with a garnish of the remaining coriander.
