Tropical cucumber salad

It's always interesting to try something different when you're making up a summer salad while entertaining family and friends. It pays to be a little bit more imaginative and try some different ingredients to liven up your salads and add a twist to them. It will surprise your fellow diners and adds a nice touch to your meal by combining cucumber, avocado and mango with a salty-sweet dressing for a taste of the tropics.

Serves Four

Ingredients

3-5 teaspoons fish sauce

1 teaspoon freshly grated lime zest, plus more for garnish

2 tablespoons lime juice

2 tablespoons light brown sugar

1 teaspoon rice vinegar

1/4 teaspoon crushed red pepper

1 medium cucumber, cut into 3/4 inch dice

1 avocado, cut into 3/4 inch dice

1 mango, cut into 3/4 dice

1/4 cup chopped fresh coriander

 

Directions

1. Whisk fish sauce to taste

2. Add lime zest, lime juice oil, brown sugar, vinegar and crushed red pepper in a large bowl until combined

3. Add cucumber, avocado, mango and coriander and gently toss to coat.

4. Serve garnished with lime zest if desired.
