Chef Kate Lawlor has returned to Cork for a new venture
Dunnes Stores has earned a special place in my heart ever since they introduced the Simply Better range.
By championing Irish producers—both artisan and larger companies—they’ve created a fantastic selection of cheeses, preserves, pastries, meats, and more.
Their commitment to quality and local food has only deepened over the years, with stores like Bishopstown leading the way in establishing vibrant food halls featuring Whelan’s, Sheridan’s, and O’Connell’s Fishmongers alongside everyday grocery essentials.
Now, the Patrick Street store in Cork city has embraced this concept, bringing an exciting lineup of food counters into the heart of the supermarket. Sheridan’s Cheese, Baxter & Greene’s rotisserie and deli, Sushi Gourmet, and Alternative Bread Company are all there, offering their wares. And then there’s O’Connell’s Fishmongers—one of Cork’s finest suppliers of seafood—taking centre stage with an extra-special addition: the return of the wonderful Kate Lawlor.
I can’t tell you how thrilled I was when I heard that Kate, formerly of the much-loved Fenn’s Quay Restaurant, would be heading up the counter, preparing both hot and cold fish dishes. I still have the fondest memories of her fish platter at Fenn’s Quay—each bite showcasing her deep appreciation for fresh, high-quality ingredients. Kate and Pat O’Connell have worked together for years, their mutual respect evident in the way they handle and present seafood, so this partnership at Patrick Street is a perfect fit.
Kate’s return to Cork after her time in the UK feels like a homecoming we’ve all been hoping for. She belongs in a kitchen, sharing her talent with those lucky enough to taste her food. So, if you find yourself near Patrick Street, be sure to stop by, give her a wave, and try one of her dishes—I promise you won’t regret it.
As for the Simply Better range, it continues to be a shining example of what Dunnes Stores does best. With over 300 products—more than 250 of them Irish—it celebrates producers by proudly showcasing their names and origins on the packaging. The sleek black branding makes it easy to spot on the shelves, and among its offerings, you’ll find well-loved names like Foods of Athenry (their granola is a personal favourite), Burren Smokehouse, and Wexford Home Preserves, alongside exciting discoveries from smaller producers.
I remember being caught off guard many years ago when I was unexpectedly asked to give a talk at a food event I had helped organize.
Unprepared, I reached into my pocket and found a receipt from a rushed Dunnes Stores shopping trip earlier that day. As I scanned it, I realized that out of 15 items, only five were Irish—you can imagine the topic of said talk.
That moment stayed with me, and a few years later, I had the pleasure of meeting Diarmuid Murphy Kavanagh, who was instrumental in shaping the Simply Better brand. Hiring Diarmuid was a stroke of genius—his passion for Irish artisan food helped make Simply Better what it is today.
But for now, my focus is firmly on Kate and the excitement of tasting her food once more. It’s wonderful to see her back in Cork, and I can’t wait to enjoy the magic she brings to O’Connell’s Fishmonger counter.
Here’s to great food, talented chefs, and the joy of sharing a meal made with love.
