Ingredients

For the casing:

40g White chocolate

250g Milk chocolate

For the filling:

25-35g Kataifi pastry (depending on how gooey you want the filling to be)

10ml Vegetable oil

30g Pistachio paste

30g Tahini

25-50ml Baileys Original Irish Cream (again this can be adjusted to taste and texture)

10g chopped pistachio

Method

1. Toast your kataifi in a pan with oil until it is golden brown. Remove from the pan once cooked and set aside to cool.

2. Heat your white chocolate on a double boiler or in the microwave. Once the chocolate is melted drizzle into your moulds using a spoon, making any playful designs you want, and pop it in the fridge for 5-10 minutes until the chocolate has set.

3. Now heat your milk chocolate on a double boiler or in the microwave. Pour your milk chocolate into your prepared moulds and swirl it around so it coats all sides and tip out any excess chocolate back into the boil. Clear any chocolate that has spilled on the edges of the moulds and place in the fridge to set.

4. While the chocolate is setting, it’s time to make your filling. Combine the pistachio paste, chopped pistachios and the tahini and stir with a spatula until well mixed. Then mix in the Baileys and the kataifi pastry.

5. Take you moulds out of the fridge and fill with the pistachio mixtures. Now, drizzle some more milk chocolate on top of the pistachio and smooth out with a spatula.

6. Put back in the fridge to set, and once ready, break open to see that gorgeous green filling ooze out. Enjoy!
