This delicous red cabbage dish is cooked in a slow cooker.

Recipe: Go red this Christmas!

This festive red cabbage recipe is a real favourite side and comes from Cork’s Roots Kitchen. It serves 4-6 people.

Ingredients:

500g red cabbage sliced

200g diced onion

80g fresh cranberries

3 teaspoon brown sugar

Juice of 1 orange, zest ½ orange

300g diced apple

70g butter melted

100ml red wine

20ml red wine vinegar

Pinch of garlic (about 1/5 teaspoon)

1-2 sprig rosemary

1-2 bay leaf

1-2 teaspoon thyme

Salt to taste

Method:

Add all to a slow cooker with a lid and cook low and slow for 3 hours. Keep an eye on it over the 3 hours and stirring occasionally. Don’t forget to season.

This will keep for 3 days in the fridge and it freezes well. Enjoy!
